I remember that nature wants everything to be stable. So if a fat is stable --> then it won't get digested easily --> so it will sit around in your body clogging up places/things --> peoples' health is getting damaged and fat. So how can nature like people to be fat?

And if fatty foods (for example chicken) are more stable --> less likely to spoil --> so then why does chicken spoil faster than things like oils which are less stable than chicken? (unless fats defy the rule of nature liking stability)

Nature want people to survive and store some fat as a reservoir of energy in case of some emergency kind of situation. Fat being slow or less reactive so its can be stored in the body.
However fat is a source of energy for doing work and nature wants this energy to get used up also.
People who can not make a balance between energy spent and food eaten are fat. All parts of our body are evolved based on the requirements of survival (Theory of evolution) but now our survival has become easy. We are not doing so much work because of this fat stored in the body is not consumed in doing work.

Chicken is a mixture of many form of matter and it is not pure oil .There are many things in chicken which have higher rate of spoiling then pure oil.
